TT Banana Bread

TASTEY TUESDAY

Good morning all! I hope you are having a great day. Today the little men and I will be off running a million errands so I wanted to make sure I got this posted first thing.

 The trick to GREAT banana bread is BROWN BANANAS.

Who hasn't bought a bunch a banana's with the intention of eating them only to wake up one morning and find them in the bowl looking like this?

Well lucky for you this recipe will give you something tastey out of those nasty bananas.

What you'll need:
2 - bowls, 1 for wet items 1 for dry items.  
2 cups all purpose flour
3/4 cup sugar  
1 tsp salt
3/4 tsp baking soda  
2 LARGE eggs (lightly beaten)
1/4 cup vanilla yogurt (Love Trader Joe's low fat Vanilla yogurt or Dannon light n fit)  
3 very ripe bananas (mashed well)
6 Tbsp unsalted butter (melted and cooled)  
1/2 cup chocolate chips (optional)

Step One
Preheat the oven to 350 and spray bread pan.

Step Two
Combine flour, sugar, salt and baking soda. Make sure to mix well.


Step Three
Lightly beat eggs

Add yogurt

Add butter

Add banana's. Make sure to mash well.

Step Four
Gently fold wet mixture into dry mixture.
I use my KitchenAid mixer but instead of the break hook use the beater,
you want this the dough to be more the texture of cookie dough then bread dough.
If using Chocolate Chips add last thing.

Step 5
Pour into pan and bake about 55 minutes.
*You will know it is done when the bread is golden brown & a toothpick
inserted into the corner comes out with just a few crumbs.

Step 6
Cool in pan 10 minutes then unmold onto wire rack to cool at least 1 hour.
